Welcome to this third episode of our podcast, in which we are joined by Sébastien Fillon (Le Clos du Serres), Chairman of the Terrasses du Larzac AOP association in Pégairolles de l’Escalette, the gateway to the appellation’s territory. This is an opportunity to look back at the history of the appellation within the broader history of the Languedoc wine region.
The crisis of 1907, although long past, remains a source of inspiration and emotion, as it laid the foundations for the AOC system. The journey of the Terrasses du Larzac appellation began in the 1970s and 1980s, under the umbrella of the Coteaux du Languedoc appellation: at that time, winegrowers felt the need to highlight their local characteristics, and the finesse and subtlety of their unique terroirs.
This was a significant period, as François de Cabissole (Château de Jonquières) points out: “It was an exciting time because we knew we were creating something powerful and significant. We were coming together; for me, it was an exciting and brilliant era.”
Today, two cooperative wineries produce AOP Terrasses du Larzac wine. Fonjoya and Castelbarry (Piémonts Causses et Cévennes).
