It is in front of the Grandmont Priory in Saint Privat that Sébastien Fillon (Le Clos du Serres) brings this epic tale of the Terrasses du Larzac appellation to a close – a story that continues to unfold today. This provides an opportunity to reflect on the region’s ancient history and the importance of the monks and abbeys in the development of viticulture here.

For Sébastien Fillon, vineyards and wine write their history over the long term: the finest Languedoc appellations are often sites that monks cleared and cultivated 10 centuries ago.

Identifying the finest terroirs is therefore a time-honoured practice. It requires care and hard work, as Olivier Bellet (Le Clos Rivieral) explains: “We must remain small-scale winegrowers, remain attentive to our terroir, remain in tune with it, and care for it as best we can.”
