Today, We are diving into a subject I love and that truly inspires me. Pastry for athletes or how to blend performance with pleasure. You might be wondering how can pastry actually fit into an athlete's nutrition? Is it really possible to combine indulgence and health? And can an athlete enjoy pastry every day? That's the big question. Well, these are exactly the questions I'll be answering today with a beautiful craft in the world map. And to begin, I want you to step into the vast world of athletic needs because that is where everything starts. Before we can offer the best to an athlete, we have to understand how their body works. First, the type of sport they practice. Are we talking about a swimmer, a triathlete, a cyclist or a football player? They don't have the same needs. Even within a team, a goalkeeper doesn't need the same nutrition as a striker or a defender. We adapt according to the discipline and the athlete's role. What matters is diving into their activity and understanding all the physical mechanisms at play, and also the cognitive ones. We now know these have a major impact. And what do we mean by cognitive mechanisms? Everything related to the brain. Attention, memory, reasoning, and let's say this is on making and so on. Because you know in sports, body and mind are inseparable. Second, their rhythm. Cycle of efforts and recovery. There are three major moments. Before the efforts, in the hours leading up to training or competition, during the efforts. where maintaining energy is crucial after the effort, the essential recovery phase. Third thing which is very important is also the personal sensation. An athlete may have intolerance or intolerance to certain ingredients. Some foods may be harder to digest. They also have preferences. All of this matters when creating a tailored approach. This element allowed us to build a true individualized assessment. And you know, if we want to go further, we can also look at the athlete's entire physiological system. Let's say a more scientific, high-level approach involving doctors, nutritionists, and specialized labs. This is the next level. So, whether you are a pastry chef, a coach, or simply... passionate about nutrition, how you can play in that game, how you can have a key role in the balance. Once the needs are identified, now you have everything as a chef to know to support the athletes at several key points of the day. First of all, the breakfast, then the pre-training snack drink. Third. The during-effort snack and drink for especially long efforts. Fourth, the post-training snack and drink for recovery. And of course, desserts that accompany meals. Desserts, you know, that bring pleasure and still respect nutritionally, which is very important. All these moments are opportunities to bring recipes that are tasty, functional, sweet and even savory. You know, in a hotel or different places, for example, where there is a pastry chef, usually he's in charge of the breakfast time. And he does pancakes, waffles. So all of that can be adapted also in a savory or performant-oriented version. Now that we have covered the athlete's needs and our role as chefs, let's get into the heart of the matter. How this actually translates into creation. Let's give some example. Let's start maybe with the ideal athlete's breakfast. Four fundamental elements. One, quality of the proteins. Second, complex carbohydrates, ideally low glycemic index. Fresh food and also healthy fats. All that's for in, let's say, nutrients, ingredients are very important in your ideal athlete's breakfast. Let's imagine. A gluten-free sourdough bread we prepare ourselves. On the toast, we can add almond butter, avocado, alfalfa sprouts, even smoked salmon. We can also create protein smoothie bowl with coconuts and berries. Why not blackberries, for instance? Pancakes, savory waffles, or why not crepes? Street of savory. Designed intelligently around protein and good carbohydrates. Topped. with quality fresh fruit and healthy fats. Let's jump now on for the snacks. Before the effort, the goal is clear. Provide energy without overloading digestion. Simple ideas could be a banana, unsweetened apple sauce, a few nuts or gluten-free bread with almond butter. Or more creative version, mini banana bread made with buckwheat and coconut oil. Oatmeal and Walnut Energy Cookies. And Apple Sauce Enhanced with Chestnut and Vanilla. During the efforts. Essential for long efforts. A NIDRATION Endurance Drink. The recipe is simple. First, water. Then a pinch of salt to replenish electrolytes lost through sweat. Plus fruit juice. Can be apple, grape, pomegranate or cranberry. and then a touch of honey. We can also offer day citrus gels, homemade raspberry pâte de fruits, energy balls for quick energy release. Let's go now after the effort. It's time to recover. The goal is to rebuild muscle fibers, restore energy stores, soothe inflammation, and replenish nutrients. We target proteins to repair the muscles, complex carbohydrates to replenish glycogen, antioxidants to reduce oxidative stress, and healthy fats to support absorption of fat-soluble vitamins. Let's go now for the recipe. Why not having a chocolate, silicone tofu, blueberry mousse, recovery smoothie with, let's say, coconut water, glass cherry, and Plain protein. We can also have a protein-hot banana vanilla crepe plus mixed berry topping. And then why not a cacao cranberry energy cookie? The key is to understand the athlete's nutritional needs and using them intelligently in our recipe. I hope this episode inspires you to explore a new approach.
